Business can be quite various. Here in Uzbekistan it is at the same time uncommon and painfully familiar. Further we offer you a series of articles “–KA around us”. Very simple, -KA is the ending of names of business types in Russian language. The series includes such articles as PirojKA (patties production and sale), SemechKA and more (loose sale of sunflower seeds and sale of candies, nasvay (local tobacco product), cigarettes by the piece), BaklashKA (tare collection points) and many more. The aim of the series is detailed description of business at issue. Moreover, we aim to find out whether this or that business is profitable.

This article is devoted to famous and favourite patties, so called ukho-gorlo-nos or gumma (pluck patties).

Many of us know what it is and how tasty it is. At those moments when you stand in the queue and wait for gumma to be fried you don’t even think how is it prepared? Not even mentioning those who cook it. How early should they start cooking for us to enjoy the taste of these patties even in the early morning? The only important thing for us is that gumma has the taste familiar to us from early childhood. Some basic ideas of how and from what gumma is cooked are enough for us in daily life.

Absence of meat at kitchens of many and many people made them to find the way out from the situation in order to feed themselves and their families. The most characteristic features of products necessary for cooking pluck patties are their availability and low cost.

Gumma

bizplan_pirojka_3.jpgGumma (from Uzbek language) means both patties in general and a separate type of patties. Pluck is uses as filling to cook gumma. Across the territory of Uzbekistan gumma is generally cooked and consumed in Tashkent and Tashkent Region.

Not every fast food dish in Uzbekistan can compete with gumma in popularity among thousands of people. Despite the frequent critics that it is unhealthy food or by-product. There is no single opinion. Its like in football: gumma has both fans and anti-fans. How often can we hear: Gumma??? Are you mad?! I will never eat it in my lifetime! Of course, we are not going to make anyone change their minds. The aim of the article is description of this business.

A little bit of nostalgia

bizplan_pirojka_5.jpgIn Soviet Union times due to great demand production of pluck patties picked up the speed and even special equipment for their production was manufactured.

Pluck patties have been sold in many parts of the city in special movable fryers or small containers. Some of them were equipped with coppers for cooking pluck patties in place so that clients could enjoy the palate fullness of patties.

Retail outlets were supplied with half-ready goods in cars and motor scooters.

Usually these were Izh-2715 (Sapojok boot from Russian) which later due to that fact got a nickname Pirojkovoz (patties carrier from Russian) and motor scooter TG-200 Murovey (ant from Russian).

bizplan_pirojka_8.jpgAs we have decided to remember how the thing have been going at that time, lets have a look on couple decades ago and remember where our parents, grandparents, uncles and aunts, elder brothers and sisters have been buying their favourite pluck patties.

In previous years (i.e. in Soviet Union times) pluck patties have been sold only

  • at Beshagach (large bazaar close to the center of the city)
  • at Khadra, close to the road on Istiklol concert hall (former Friendship of the Nations concert hall)
  • close to Central Telegraph Office
  • at Central Square (fromer Gorkiy Park)
  • at Stariy Gorod (the Old City) near Gulistan restaurant

Today gumma is sold almost everywhere. The most famous places of sale are Milliy Taomlar Café (National Dishes from Uzkek) near the Cercus along Gafur Gulam Str. and in front of Farkhod Bazaar, Chilanzar district of Tashkent.

Nowadays everything is different. Though gumma is cooked in many places across the town, not so many places left were we can enjoy the taste of gumma familiar to us from the childhood.

Today youll hardly find sale points around the town with the same pans and portable containers well-known to all of us. And sellers crying: Gumma, gumma, hot gumma. Buy while its hot

How to open gumma cooking/sale point?

So what will you need to open gumma cooking/sale point?

Documents required

Wed like to pay your attention to the fact that the information was obtained directly from people working in this business.

If you decide to organize cooking/sale of gumma and patties, youll have to get permissions from some state instances. Taking into consideration peculiarities of the business these documents are similar to those necessary for opening a fast food restaurant which you can find in one of our previous articles.

Choice of sale place

  • gumma and patties are cooked in areas where production costs are relatively low and then carry/drive ready-made products to be sold in crowded places;
  • gumma and patties are cooked and sold in the same place.

Gumma is not always sold in the same place where it was cooked. There are some reasons for this:

  • bad location;
  • absence of crowded places (bazaars, bus stations, educational and medical institutions, amusement centers, etc. ) and others.

That is why some sellers cook patties in one place and sell in others. At sale points with more successful location several tables and chairs or bars are provided. This is more suitable both from material point of view and mobility. Clients get opportunity to enjoy just cooked gumma right away. Hence such small cafes gain regular customers.

Regarding cooking/sale place. Minimal area necessary for comfort work of the staff is 8 square meters. Today average rent cost of 1 square meter in center of Tashkent costs from 40,000 to 60,000 soums per month.

After you have decided on the cooking and sale place, it is necessary to determine if you sell production on your own or hire a seller. If latter, it will be necessary to open medical record for each worker and they will be ought to have medical examination each 6 months.

Moreover, depending on specifics of patties cooking equipment that is whether it operates on natural gas or electricity youll have to get permissions from sanitary and fire inspections on accordance of the equipment to sanitary and fire safety. The equipment will be checked with particular time spans by regional municipal electricity company and gas supply on the fact of legality of use of natural resources and electro energy and prompt payments.

Business profitability

Of course, you may wonder if it is profitable to do this business. We have carried out a research and made rough calculations. According to our data a small sale point produces and sells approximately 400-600 patties daily. Taking into consideration that gumma or patty cost 700 average, it is not difficult to calculate that every day profit make from 280,000 to 420,000 soum. Basing on obtained information we can conclude that larger sale points sell daily more than 1,000 gumma and patties that is over 700,000 soums of profit. Its clear that net profit wont make such a sum. Having calculated cost of products and proceeds from gumma and patties sale we calculated that net profit from sale makes more than 50% from amount received.

As we can see total cost for cooking gumma in amount of 100 pieces to be sold for 700 soums make 85,000 soums. That is loss in amount of 15,000 is vivid. However, dont forget that in the same fryer in the same oil more amount of patties, belyashs (round fried meat pies), chebureks (a kind of meat pastry) and so on can be cooked. Their cost price is considerably lower and thats how the profit is gained.

Lets have a look at the profit from cooking of other types of patties, for example, with meat or potato. Average price of meat patties make 700 soums and of potato patties 500 soums.

From the calculations it is vivid that other types of patties bring income. As you could already notice from the tables meat patties dont bring the main share of profit while potato patties do. Their cost price is considerably lower hence profit from the sale is higher.

However, the business of selling only potato patties wont be successful. The reason for this is that larger amount of buyers can hardly be attracted without sufficient range of goods.
