Diary of a Lab assistant. On how milk analyzer can help at a small diary plant

Milk analyzer at a small diary processing plant is definitely a useful device. It can facilitate operation of the whole plant by substituting half of a large laboratory which is usually is inherited by local plants from soviet times.

Keeping in mind the cost of such devices which in Uzbekistan varies from 1,100 to 1,600 USD, not every small dairy processing plant can afford to buy it today.

Yet those who made their decision in favor of milk analyzers don’t regret it a bit.

Therefore, the owner of one milk processing plant from Bukhara has recently bought “Ekomilk” analyzer. After they’d started using it for control of quality of incoming milk, the following changes has happened:

1. Started sorting milk by its quality

By analyzing milk at the moment of collection, milk started to be sorted by its quality. First sort milk is now used for production of cultured milk foods while non-sort milk – for production of curd. By doing this the producer secured himself from losses from processing milk into cultured milk foods.

2. Revealed delivery of separated milk

This dairy plant has been receiving milk from a dairy farm in the amount of 1 ton per day. Then when separating it only minimum amount of cream was produced. After carrying out analysis of incoming milk with the help of “Ekomilk” analyzer, the result showed only 1.9% of butterfat content. There was no more doubt that the farmer brings already separated milk which the producer could prove to the farmer.

Today he gets milk with fat content of 3.6%. Only with this example it can be calculated how much it can be saved if using analyzer.

3. Started identifying readiness of products by acidity

Previously, readiness of products at the plant has been identified by coagulation as well as by time which was not quite correct. After purchasing of “Ekomilk” analyzer readiness of kefir, thick sour milk (prostokvasha or katyk, and yoghurt has been checked by acidity. This helped to achieve stable level of goods quality day to day which is a significant factor for sales volume increase.
